Parmesan Chili Biscuits

When I last visited my Mum in the shire she had made these and put them in a hand-made pot for me to snack on while I was there. I liked them so much that I asked her for the recipe.

Makes about 20:

  • 70g flour
  • 45g cold butter, diced
  • 70g ground parmesan (grana padano will do the trick, too)
  • 1 pinch of salt
  • 1/3 tsp chili flakes
  • 2 tbsp icey water

Mix until the dough is smooth. Roll up, put in saran wrap and leave to cool for 15 minutes.

Cut 1/2 cm slices from the dough roll. Bake on paper for 15-20 minutes at 180°C until golden-brown.

  1. These look and sound thoroughly fantastic! I could see them being really nice with a handful of fresh herbs, too (or instead of the chilly). A little crumbled bacon or vegan bacon could be delightful as well.
